GRILLED STEAK PIZZA makes a great treat while hunkering down
indoors during the fall to watch a football game. Grilled pizza is a

creative alternative to delivery when hosting guests for the big game.
Follow these easy steps to create the perfect treat, on a charcol grill.
Food flesh off grill makes games exciting
This football season, you don't need
tickets to enjoy the hottest grid-iron games
with friends, family and food fresh off the
charcoal grill.
Gather up the home team and fire up the
grill for a tailgate party with all the sights,
sounds and smells of the stadium in your
own backyard with these smart game-day
strategies from champion pitmaster Chris
Lilly and football analyst'Mike Golic.
"Tailgating prior to kickoff is a football
tradition in my family," Golic said. "I'm
about as big of a grilling enthusiast as I am a
sports fan, so any game day is a great day to
be around the grill in my backyard."
The award-winning pitmaster recom-
mends using a charcoal grill to bring out the
best flavor of tailgate fare and shares a few
quick tips to make your menu a success.
"In fact, nothing says game day like friends
and family enjoying the signature smoky
aroma and flavors of food prepared on the
charcoal grill," Lilly said.
Score an Early First Down
Chips and dip make great appetizers for
any party.
Try paring tortilla chips with a coal-fired
pico de gallo for an instant fan favorite.
Give tomatoes, peppers and onions a quick
turn on the grill before combining with
cilantro, garlic, salt, sugar and limejuice to
taste.
Home Field Advantage
Combine two game-day traditions at your
tailgate party grilling and pizza.
Grilled pizza is a creative alternative to
delivery when hosting guests for the big
game. Plus, you can fire up another pizza
on the grill immediately instead of having
to wait for the delivery guy.
Instant Replay
One of the perks to hosting your own
tailgate party is enjoying the leftovers.
From chicken tacos to Philly cheese steak
sandwiches, there are limitless options for
what you can fix with the meat your guests
don't finish. Just make sure it gets cooked
properly on game day don't forget to
let it sit or "rest" undisturbed for l0 'to 15
minutes before serving to allow the temper-
ature to equalize and reabsorb the internal
juices.

Cook Time: 9-12 minutes
• A pounds sirloin steak
• Salt and freshly ground pepper
• 1 13.8 ounce tube pizza dough
• 4 scallions, finely chopped
• Preheat grill using charcoal
Season steak with salt and pepper and
grill for 4 to 5 minutes for rare. Remove
steak from grill and let rest for five
minutes. Thinly slice steak.
Roll dough out on a well-floured board or
pizza peel. Slide dough from peel on to
Flip the pizza dough over and top evenly
with sliced steak, green onions, and
queso fresca. Place cover over grill and
cook for 5 to 7 minutes or until cheese
with salsa verde and cilantrO.
'Phishers,' 'smishers'
step up their scares
The holidays are traditionally
h time of giving, yet they're also
a time when crooks try to take
advantage of consumers' altru-
istic attitudes.
"Seams targeting your
pocket book .tend to pop up
more around the holidays,"
stated Mike Sullivan, director
of education for Take Charge
America, a national nonprofit
credit counseling agency based
in Phoenix.
"Consumers are busy, buying
lots of goods and more than
willing to shell out extra cash
for those in need. It's important
to be cautious when making any
purchase, big or small," Sullivan
stated.
SulliVan advises shoppers to
research the validity of all online
purchases, only visit trusted
vendors and consult the Better
Business Bureau when seeking
professional services. He has
also compiled
a list of the top
holiday scums
to help keep
consumers alert
and financially
secure:
• Fake chad-
ties are among
the most popular
'holiday seams,
soliciting
consumers over
the phone, e-mail
andthroughdirect
mail. To avoid
these scums, only
donate money
to charities you
know and trust.
Ifa new charity

to verify its exis-
tence on Charity
Navigator or

Shoppers should

validity of all.
online purchases,
only visit trusted
vendors and
consult the Better
Business Bureau
when seeking
professional
services.
If you can't locate the charity
in question, use the online search
tools to find a different charity
with a similar mission.
• Fraudulent travel package
costs can skyrocket during
the holidays, steering many
consumers online in search of
deals. Take time to research
your options, and again, only
purchase travel packages from
reputable companies you know
and trust.
Fake travel sites may offer
amazing deals on vacation
rentals or hotels to lure you into
providing personal informa-
tion that can be used to steal
your identity or tap your bank
account.
This practice is knovcn as
"phishing." Fake travel sites
may require customers to pay
for all accommodations up front
and they may not provide a
phone number or e-mail address
for customer support.
• Fake contests. Many scam-
mcrs use telernarketing to tempt
consumers with prizes from
fake contests. Be very skeptical
if you get a call out of the blue'
about winning a big ticket item
like a luxury vacation.
Don't put down a deposit
or provide the caller with any
personal data. The call is likely
a seam, especially if you can't
recall entering the contest.
Similarly, stammers may
use these same techniques to
solicit personal
information with
cell phone text
messages, asking
the recipient to
call a toll-free
number. This
is referred to as
"smishing."
Be sure to alert
children, seniors
and others who
may not be cell
phone savvy
about these types
of scares.
• Naming a
star: It may sound
appealing to have
your loved one's
name immortal-
ized ir the night
sky, but it's not
really going to
happen. You are
simply paying for
a plaque -- not
an actual star.
These types of services have
been around for a while, but
consumers still fall into the trap.
The truth is, the International
Astronomical Union is the
only organization designated
to name stars, and it does not
open the opportunity up to the
public.
You would be much better off
making a gift or spending your
money in another manner.
